আমলকি পাওয়া যায় একটি সম্পূর্ণ ভিটামিন এবং খনিজ সমৃদ্ধ ফল। আমলোকে থাইমিন (ভিটামিন বি-), পান্থেনিক অ্যাসিড (ভিটামিন বি-), নিয়াসিন (ভিটামিন বি-), পিরিডক্সিন (ভিটামিন বি-), ফোলেট (ভিটামিন বি-), এবং বিটাকারোটিন থাকে। এছাড়াও, এটি জিংক এবং ম্যাংগানিজ জাতীয় খনিজ এবং ক্যাডমিয়াম মাত্রাতির কম পরিমাণে থাকে।

সংরক্ষণঃ

আমলক একটি সংরক্ষণযোগ্য ফল। তবে এর কচি রূপ সম্পূর্ণ পরিষ্কার না থাকলে তা পাকা হওয়ার পর কিছুক্ষনের মধ্যেই ধ্বংস হতে পারে। তাই সঠিকভাবে সংরক্ষণ করা খুবই গুরুত্বপূর্ণ। সাধারণত আমলক রাখতে হলে নিম্নলিখিত ধাপসমূহ অনুসরণ করতে হবেঃ

১. প্রথমে আমলক ধুয়ে নিবেন। তারপর টিস্যু পেপার দিয়ে সুখাতে দিন।

 ২. আমলকগুলো প্রতি প্রতি আলাদা আলাদা জার বা সিলিন্ড্রিক্যাল বক্সে রাখুন।

 ৩. আমলক রাখার জন্য একটি ঠাস বা কাটাচামচ ব্যবহার করুন যা সাবান এবং জারের মধ্যে থাকা             কোন পদার্থ আমলকে প্রবেশ করতে না দেয়।

৪. আমলক ফ্রিজে রাখলে তা অধিকতর কুকুর কর্ণের প্রকার দিয়ে রাখুন যাতে এর সম্পূর্ণ রুচি থাকে।

৫. আমলক রাখার সময় তাপমাত্রা স্থায়ী রাখতে হবে।
